I miss my country and the celebration atmosphere in the beginning of March over there, no matter how cheesy it can get. I miss it soooo much! :(

I also miss my Cuba. Because it’s mine and it reminds me of my childhood in communist Romania, only it’s tropical. And because it’s sunny, the people are the loveliest and the dancing is just great! And because even getting horrible food poisoning is somehow sweeter over there.

So this one is dedicated to:
– all the fabulous women in the world – realize how strong and beautiful you are intrinsically
– my tropical, Romanian and holiday self (they are the very same and in actuality my real self).

Raw Tropical Chocolate Parfait

Pure deliciousness recipe

For the chocolate pudding:
1 avocado
1 banana
2 Tbsp honey/agave
4 Tbsp raw cocoa
1 Tbsp vanilla extract (or less if you’re not in a vanilla mood)
8 medjool dates (or less, I wanted more sweetness)
water for desired consistency

You blend all of the above in the food processor. It’s ridiculously easy and soooo delicious!! I usually have most of the chocolate pudding on its own on the pretext that I am “tasting it”.

Tropical fruity blend:

2 Tbsp freshly grated coconut (you can use flakes if you don’t have the fresh coconut)
1 cup papaya
1 yellow ripe mango
1/2 cup pineapple

I liked this blend a bit chunky so I didn’t blend it too much. I especially like to taste the coconut.

To assemble the parfait – one layer of chocolate, one of the tropical fruity blend, another chocolate layer, then a layer of fresh pineapple, then more chocolate on top of that. Topped with fresh coconut shavings. Mmmmmmm mamacita!!! This is truly exquisito!!!
